Leavening

Flour and thickeners

1 cup cake flour1 cup minus 2 tbsp all-purpose flour

1 tbsp cornstarch (to thicken)2 tbsp all-purpose flour, or 4-6 tsp quick-cooking tapioca

Dairy

1 cup buttermilk1 tbsp lemon juice or vinegar + milk to make 1 cup; stand 5-10 minutes. Or 1 cup plain yogurt
1 cup whole milk1/2 cup evaporated milk + 1/2 cup water
1 cup heavy cream (cooking and baking)3/4 cup milk + 1/3 cup butter
1 cup half-and-half7/8 cup whole milk + 1/2 tbsp butter

Sugars and syrups

Spice blends
