Sourdough Baking Timeline: A Schedule from Feeding the Starter to Baking the Loaf

A sourdough loaf takes about a day and a half from feeding the starter to the first slice, but most of that time the dough is resting. This timeline sets out each step with a clock time, what to do and how to tell it is ready, with the recipe in baker's percentages and fixes for common problems.

Troubleshooting

Dense, gummy crumbUnder-fermented: give bulk fermentation more time or a warmer spot
Flat, spreading loafOver-fermented or weak shaping: shorten bulk and shape tighter
Pale crustBake longer uncovered, or preheat the Dutch oven longer
Starter too slowFeed twice a day at room temperature for a few days before baking

Notes and sources

Watch the dough, not the clock: a warm kitchen speeds every step and a cool one slows it down.

Times assume a kitchen around 75 F (24 C). Grams are more reliable than cups for bread.

Fully baked loaves read about 205-210 F (96-99 C) in the centre.
